Meet your driver in the lobby of the Masseria. You will leave the Masseria for your wine tasting today. This tour is designed for those who are curious about the world of oenology and want to satisfy their curiosity and knowledge of the world of wine with all their senses.
The Tour begins in the Fermentation Room, where it will be told how the dream of the oenologist Giovanni turned into the project that he carries out and where the various stages of production will be illustrated. The tour continues in the historic part of the cellar, founded in 1800 by Don Guglielmo Laterza.
Entirely excavated in the white Apulian stone of which the Valle d’Itria is rich, the Cellar develops in depth, where walking through the various underground spaces of the cellar you will find: the corridor of the prints where the labels of the wines of the winery are born. Le Bottaie: with its large barrels from the 1800s transformed into welcoming and characteristic seats, where you can see our barriques being aged. It ends with the tasting of the wines, accompanied by an aperitif of excellence from the Apulian territory including: fried broad beans, toasted almonds and Leccine olives, artisanal Apulian tarallini, focaccia from Bari, mozzarella, burratine and caciocavallo aged in the wine marc, at Km0, friselline with cherry tomato and Extra Virgin Olive Oil, Martina Franca capocollo and Pugliese salami.
At the end of your experience, and before returning to your Masseria, you will continue with another Apulian experience. Along rural roads of the Adriatic coast, which border the most beautiful Apulian beaches and expanses of millenary olive trees, you will be able to observe the places we love and live in every day. In the strip of land on the border between the provinces of Bari and Brindisi, the green of the olive trees is interrupted to reveal a treasure of Puglia, a village of peasant life, in symbiosis with nature and respecting traditions. Starting from the 16th century, the territory between Fasano, Monopoli and Ostuni welcomed numerous farm buildings, characteristic defensive and agricultural garrison structures of the countryside, around which the economic and social life of the time took place.
Today you will witness the production of mozzarella and burrata. Afterwards, you will taste the fresh and aged cheeses accompanied by homemade taralli, locally produced olive oil with water.
